Flipping amazing pancakes to try this Pancake Day!

Forget Easter. Move over Christmas. Everyone knows that the best holiday of the year is Pancake Day. Get your frying pan at the ready, and try some of these delicious pancakes!


These simple recipes are also full of nutritious ingredients - so stack em’ high. 

Pumpkin Chocolate Chip Pancakes

Make your pancakes a little different this year! These pancakes are made with real pumpkin, and sweetened with a touch of maple syrup. 


The Ingredients;

  • 2 cups of white flour

  • 2 tsp of Baking power

  • 1/4 tsp of sea salt

  • 1 1/2 tsp pumpkin spice

  • 3/4 cups of pumpkin puree

  • 1 cup of unsweetened almond milk

  • 1 Egg

  • 1 tsp of vanilla extract

  • 1/3 cup of chocolate chips

  • 2 tsp Maple syrup (and more if you desire!)


The Method;

STEP 1: In a large bowl, combine the flour, baking powder, sea salt and pumpkin pie spice.

STEP 2: In a separate bowl, combine the pumpkin puree, almond milk, egg, vanilla extract and 1 tablespoon of maple syrup.

STEP 3: Add the wet ingredients to the dry ingredients and stir to combine. Stir in the chocolate chips. If your batter is too thick at this point, you can add a little bit more almond milk.

STEP 4: Spray or melt coconut oil in a large pan over medium heat. Add ⅓ cup of batter to the preheated pan.

STEP 5: Cook until all of the bubbles have popped (about 3 minutes) flip over and cook for an additional 1 minute. Repeat until all of the batter has been used.

STEP 6: Serve warm with maple syrup, nut butter or preserves.

Lemon Poppyseed Pancakes

This pancake recipe is made with wholesome ingredients, which taste delicious too! 

The Ingredients; 

  • 2 cups Oat flour

  • 2 tsp of baking powder

  • 2 tsp of organic poppy seeds

  • 1/2 cup of unsweetened applesauce

  • 1 cup of unsweetened almond milk

  • 1 large egg

  • 1 Lemon

  • 2 tsp Maple syrup (and more if you desire!)

  • Coconut oil

The Method;

STEP 1: In a large bowl combine oat flour, baking powder, and poppy seeds.

STEP 2: Add in almond milk, applesauce, egg, lemon flavouring and maple syrup.

STEP 3: If batter is too thick add in a bit more almond milk, but batter should NOT be thin like crepes.

STEP 4: Spray or melt coconut oil in a large pan over medium heat.

STEP 5: Add a 1/3 cup of batter to form pancakes.

STEP 6: Cook until all bubbles have popped (about 3 mins) & flip over for 1 min. Repeat until all batter is used.

STEP 7: Serve warm with maple syrup, nut butter or berries.








Fluffy Coconut Pancakes with Wild Blueberry Syrup 

Amazing coconut pancakes, served with an optional fresh wild blueberry maple syrup. What’s even better, is that these packages are also paleo, dairy free, gluten free, and grain free!

The Ingredients; 

  • 1/4 cup coconut flour

  • 1/4 teaspoon baking soda

  • 2 tablespoons your favourite natural nut butter of choice

  • 2 eggs, slightly beaten

  • ½ tablespoon honey or maple syrup

  • 1/2 medium very ripe banana, mashed (about 1/4 cup mashed banana)

  • ¼ cup unsweetened vanilla almond milk, plus more if necessary

For the syrup; 

  • 2/3 cup wild organic blueberries

  • 2 tablespoons pure maple syrup

The Method 

STEP 1: In a large bowl whisk together coconut flour and baking soda; set aside.

STEP 2: In a separate medium bowl, mix together the nut butter, eggs, honey, banana and almond milk together until smooth and well combined. Add wet ingredients to the flour mixture and mix together. Note: If you find that the batter is WAY too thick (almost paste-like), you can add in a teaspoon or two of milk until it is smooth.

STEP 3: Lightly coat a large pan with butter or coconut oil and place over medium-low heat (coconut flour is sensitive to burning so medium-low heat is best). Drop about 3 tablespoons of the batter onto the skillet; you may need to use a spoon to spread out the batter just a tiny bit. It's important not to place more than 3 tablespoons of batter at a time; the pancakes can be hard to flip if they are too large, so smaller pancakes are best. 

STEP 4: Flip your pancakes, and cook until golden brown on underside.

STEP 5: To make the syrup, place maple syrup and blueberries in a saucepan over medium heat. Wait until mixture begins to simmer and boil, and stir every few minutes.

STEP 6: Once the mixture begins to break down, remove from heat and serve warm over pancakes immediately!
